I have to say what makes a pastie a pastie are the traditional ingredients. These are meat pies, handheld. A pie is assembled and cooked. A feel like a sandwich is assembled, and maybe heated, but all the components are already cooked.

These are hand pies. Pasties are beef and potatoes in a dough. It’s actually a requirement that they taste like nothing and are awful. Yours look delicious AF.

I just learned of the “Turnover” category in which this would fit, it is a subcategory of pie in which things like Pasties, Empanadas, curry puffs and Böreks live. It is a delicious subcategory but it is definitely not a sandwich.
